Drawing inspiration from my diverse research experiences, I aspire to delve into the following key areas:

  •  Conducted research on the effect of Lipids and particle size on the physicochemical properties and in-vitro digestibility.
  •  Development of starchy foods to enhance nutritional functionality and slow starch digestibility in rice through appropriate processing techniques, particle size adjustments, and variety selection.
  • Explored and advanced the understanding of innovative food processing techniques and their applications in the development of functional food products with enhanced nutritional, sensory, and functional properties
  • Addressed key challenges in the food industry, such as the development of healthier and more sustainable food products.
  • Implement microwave-assisted and ultrasonication techniques to enhance the bioactive compounds.
